We often think of banana cake as dense and heavy, but this doesn't need to be this way.

This banana cake is light and fluffy. Even better, it is sandwiched with thin layers of dulche de leche (or caramel) without overpowering the flavour of banana, and chocolate chips sprinkled on top of the dulche de leche giving you a mouth full of nice bitter crunch.

Cacoa nibs get sprinkled on top of this caramel meaning you have a really nice bitter crunch with every mouth full. Last but not least, the cake is frosted with cream cheese double cream. Delicious!
